In our October 15 interview with Dr. Lisa Price we discussed the health benefits of mushrooms. Here's a yummy recipe that's both healthy and delicious which features three types of mushrooms.
Ingredients:
1 cup walnuts
1/2 cup butter, slated
1/2 onion, chopped
1/4 pound Shiitake mushrooms
1/4 pound of Chaterelle mushrooms
1/4 pound of Portobella mushrooms
1 teaspoon of roasted garlic
1/4 cup fresh Italian Parsley
1/2 teaspoon of dried thyme
1/2 teaspoon of sea salt
1/2 teaspoon of white pepper
2 tablespoons olive oil
Directions:
In a small frying pan, spread walnuts in a single layer and toast over low heat for 10 minutes or until fragrant.
In a large frying pan, melt the butter over medium heat, add onion and cook until onions are soft. Mix in mushrooms, garlic, parsley, thyme, salt and pepper.
Stir until mixed.
To a blender add the walnuts and the olive oil until the mixture forms a paste.
Add the mushroom mixture and blend until smooth.
Transfer to a bowl and cover. Chill in the refrigerator for at least 4 hours before eating.
