Southern Flatbread

A Healthy Snack with a Latin Twist

This is a Mexican-inspired nutritious snack making use of seasonal fruits and vegetables: heirloom tomato, tomatillo, and corn. Hope you will enjoy it.

Tomatillo is a native Mexican plant that is commonly used in salsa. This snack a well-balanced dish with lots of vitamins, minerals and protein. Tomato and tomatillo are rich in vitamins A, C and K, as well as potassium and manganese. The addition of corn and soybean brings iron, calcium and protein to the mix.

Recipe: Southern Flatbread

A flatbread wedge with a tomato and bean topping is perfect for a party snack.

Ingredients (4 servings):

Topping: • 2 tbsp canola oil • ½ onion, finely chopped • 2 gloves garlic, minced • 2 heirloom tomatoes, seeded and diced • 1 cup fresh corn • ¾ cup canned soy bean • 3 tomatillos, chopped • 1 cup cilantro, chopped • 1 ½ tsp tomato paste • 3 oz cheddar or mixed cheese, shredded • Flatbread or tortilla • Salt, pepper, and paprika to taste

Spread: • 1 avocado, smashed • 1 tbsp mayonnaise, Dijon-style if available • ½ tsp mustard

Process • Preheat oven to 375°F. Line a baking tray with foil • Heat oil in a skillet over medium-high heat. Add onion and garlic, stirring often, until onion is soft but not browned (about 5 minutes). • Reduce heat to medium. Add tomatoes; cook till softened • Add corn, soy bean, tomato paste, salt and pepper to taste; cook for 5 minutes • Stir in tomatillos, cilantro, and paprika • Pour mixture into the lined baking tray; sprinkle cheese on top • Broil until cheese melts and slightly browns (about 5 minutes) • Meanwhile, toast flatbread in a clean skillet over medium-low heat until slightly hardened (about 3 minutes) • Prepare spread by mixing all ingredients; spread over flatbread

To serve: Spoon topping over flatbread and serve immediately
